Cranberry Pista Muesli - Home made Low Calorie
As a parent, there's nothing quite as satisfying as knowing you're nourishing your child with wholesome, homemade goodness. When my son started showing interest in breakfast cereals, I found myself concerned about the nutritional value of store-bought options.
Easy to make and bursting with natural flavors, it quickly became a favorite in our household, especially with my son, who eagerly devours it each morning.
Ingredients:
- 1 cup quick or rolled oats
- 2 cups puffed rice
- 1 teaspoon vanilla extract (optional) or 1/2 teaspoon cinnamon powder
- 1/4 cup cooking chocolate
- 1/2 cup chopped toasted pistachios
- 1/4 cup chopped dates or apricots
- 1 tablespoon raisins, halved (optional)
- 1/2 cup cranberries, halved
Method:
-
Begin by roasting the oats in a Kadhai until they turn slightly brown. Set aside.
-
In the same Kadhai, dry roast the puffed rice until slightly crispy. Remove and set aside.
-
Turn off the heat. Add half of the chocolate to a warm pan. (Warm the pan and turn off the flame; it should not be too hot, as the chocolate will burn.)
-
The chocolate will begin to melt. Gently push it around the Kadhai so that it coats the bottom.
-
Once melted, add in the cinnamon powder or vanilla extract along with the puffed rice. Mix until the chocolate thoroughly coats the puffed rice. Let it cool, then remove and set aside.
-
In the same Kadhai or pan, warm it again and turn off the flame. Add the remaining chocolate and let it melt.
-
Then add the roasted oats and mix well; they will form into small lumps. Once thoroughly mixed, remove and set aside.
-
Next, combine all the prepared ingredients in a bowl: the toasted nuts, cranberries, dates, raisins, chocolate-coated puffed rice, and oats. Mix well.
-
Store the muesli at room temperature in an airtight container.
-
Serve with cold milk and enjoy!
Notes:
- Feel free to customize this recipe with your favorite nuts, seeds, or dried fruits for a personalized touch.
- Ensure the chocolate is melted gently over low heat to prevent burning.
- Toasting the oats and puffed rice enhances their nutty flavors, so don't skip this step!
- This muesli can also be enjoyed as a crunchy topping for yogurt or as a wholesome snack on its own.
