Curd Dosa Recipe
This unique recipe is my husband's grand mothers recipe. I absolutely fell in love with it the first time i ate it.
It's one of those unique family recipes that never show up in regular cook books. I love this paired with a ginger chutney.
This soft on one side and crispy on the other, savoury dosa made with rice and curd, flavoured with onions, coriander, ajwain and green chillies. Prepared without the need for traditional fermentation, this simple recipe is perfect for a quick breakfast or a light meal.
Ingredients

2 cups raw rice (any regular variety of rice can be used)

2 cups curd

1 onion, finely chopped

1 tbsp chopped fresh coriander

A few green chillies, chopped

1 tsp ajwain (carom seeds)

Salt to taste

A pinch of cooking soda

Oil, for cooking (approximately 1½ tsp per dosa, as required)
Method

Wash and dry the rice. Wash the rice thoroughly, then spread it out on a clean cloth or paper to dry. Allow it to dry completely before grinding.

Grind the rice. Once completely dry, grind the rice in a mixer-grinder until it resembles very fine rawa (suji). Avoid grinding it into an overly fine powder.

Prepare the batter. Transfer the ground rice to a bowl. Add the curd, chopped onion, coriander, ajwain and salt. Mix everything well.

Rest the batter. Set the mixture aside for 20–30 minutes.

Add the cooking soda. Just before cooking, add a pinch of cooking soda and mix well.

Heat the kadhai. Place a small kadhai or appam pan on the stove. Add approximately 1½ teaspoons of oil and allow it to warm gently.

Add the batter. Using a ladle, pour ½ cup of the mixture into the centre of the kadhai. Sprinkle the chopped green chillies over the top.

Cook covered. Cover the kadhai and cook over a medium flame until the dosa begins to loosen from the sides.

Flip and cook the other side. Gently flip the dosa and cook the other side until lightly browned.

Serve. Once both sides are cooked and the dosa is lightly browned, remove it from the kadhai and serve hot.
Serving Suggestions

Serve with coconut chutney or coriander-mint chutney.

Pair with a bowl of sambar for a more substantial breakfast.

Enjoy with a side of fresh curd or your favourite homemade chutney.
