Makhana Mattar Mushroom
Makhana(fox nuts) ,Mattar(green peas) and Mushroom Yummy Mix
Ingredients and Preparation
1 cup makhana
Take a kadhai add 1-2 tsp of ghee ,when the ghee gets warm Add the makhana and roast it till it turns beige and becomes crisp.
Remove and keep aside
8-10 mushrooms
Cut into 4 pieces each of them
In the same kadhai add 1-2 tsp of oil, when the oil becomes warm
Add the cut mushrooms and stir fry in full flame ,so that it does not leave water
When the mushrooms becomes a little soft, remove from the kadhai and keep aside
1/2 cup peas
If using fresh peas then need to cook it 75% and keep aside
If using frozen peas
Stir fry in the kadhai with 1 tsp of oil for a minute or so and keep aside
For the masala
1 1/2 onions sliced
6-8 pods of garlic
1 " pc ginger cut into pieces
2 tbsp of cashew
1 tbsp of melon seeds
1 " piece of cinnamon stick
2 pieces of green cardamom
- In the same kadhai add 1 1/2 tbsp of oil
- Add the cardamom and cinnamon
- Stir for few seconds then
- Add the sliced onions and stir fry till it becomes beige
- Then add the garlic pods and the cut ginger and stir fry till the raw smell of the ginger garlic goes
- Now add the cashew and melon seeds to the kadhai and stir fry till they are roasted in the masala .
- Remove and keep aside
- When this mixture cools down
- Put in a grinder and make it into a smooth paste
- Keep the paste aside
In a bowl put 2 tbsp of curd ,salt to taste ,pinch of turmeric, 2 tsp of kashmiri chilli powder, 2 tbsp of dry kasturi leaves and 1 tsp coriander powder ,mix it all in together well .
Keep this mixture aside .
Remaining ingredients
1 tsp whole cummin
Few slitted green chillies
1 tsp dry kasturi methi leaves
1/2 tsp sugar
2 tbsp of ghee
Method
- Take a pan add the ghee ,when the ghee becomes warm
- Add the whole cummin ,slitted green chillies and the kasturi methi leaves
- Stir fry till the cummin starts spluttering
- Then add the cashew onion paste and saute fir 5-7 minutes on low to medium flame
- Now add the curd and masala mixture and saute for 5-10 minutes on low flame
- In the masala add the stir fried mushrooms and peas
- Stir in in well with the masala
- Then had the roasted makhana and mix it in well together
- Cook on low flame for few minutes
- Now add 1-11/2 cups of warm water
- Mix it in well ,so that th masala infuses with the water
- Let the makhana cook in it
- Now add the sugar ,mix it in
- Cook on low flame till the gravy thickens .
- Done
