Tomato Basil Soup

Tomato Basil Soup - Simrun Chopra

Ingredients
  • 4 medium to large tomatoes cut into 4-6 pieces each 
  • 2 medium size carrota cut in circles 
  • 8-10 pods of garlic 
  • Salt to taste 
  • 1/4 tsp chilli flakes 
  • 1/4 tsp black pepper 
  • 1/4 tsp sugar 
  • 1/4 tsp olive oil
  • 1/2 cup milk 
  • 1/4-1/2 cup water (depending on consistancy preferred)
  • 1 tbsp of finely chopped garlic
  • 1 tsp finely chopped basil stem 
  • 5 - 6 basil leaves
  • 2 roughly chopped basil leaves 
  • 1/2 tsp roasted white sesame seeds 
  • 1 tsp olive oil 

Method
  • In a baking bowl add the tomatoes, carrots ,pods of garlic ,salt to taste , chilli flakes ,black pepper , sugar and olive oil
  • Mix it and then put in an oven for 15-20 mins at 180 ° 
  • If using an air fryer ,can place in the air fryer after mixing it and cook for 10 minutes ,mix it again then cook for another 7-10 minutes .
  • If doing in a pan cook on low flame till it is cooked and the edges start changing colour
  • When done,let it cool down .
  • Now add to a grinder and grind it .
  • add the milk and water .
  • Grind to a smooth paste and keep aside 
  • Take a pan add olive oil then add the finely chopped garlic
  • Stir fry till it starts changing colour ,then add finely chopped basil stem
  • Then add the basil leaves
  • Stir for 30 -40 seconds
  • To this add the paste from the grinder and mix it in well stirring continously on medium to low flame .
  • Add a little water to the grinder and rinse out on to the soup.
  • To the soup now add the cut basil leaves .
  • Stir gently
  • Lastly add the white roasted sesame seeds .
  • And done.
