AMARANTH PINEAPPLE CASHEW PULAV

AMARANTH PINEAPPLE CASHEW PULAV

A sweet yet spicy pulav that i love. 

 

INGREDIENTS

  • 1/2 cup cooked amaranth 
  • 1/2 tsp jeera
  • 1/2 tsp chopped ginger 
  • 1/2 tsp chopped green chilies 
  • 1/2 cup chopped pineapple 
  • 1/4 cup chopped roasted cashew 
  • 1/2 tsp melted ghee
  • salt to taste

METHOD

  • Add ghee to a kadhai and add the jeera and green chillies 
  • Once it splutters add the ginger 
  • Cook for a minute
  • Add the roasted cashew and pineapple 
  • Add the cooked and washed rajgira and mix.
  • Cook till the flavours are incorporate

NOTE 

  • I cook a large batch of rajgira 
  • wash and drain it to get a non sticky grain that can be used in many way
