AMARANTH PINEAPPLE CASHEW PULAV

A sweet yet spicy pulav that i love.
INGREDIENTS
- 1/2 cup cooked amaranth
- 1/2 tsp jeera
- 1/2 tsp chopped ginger
- 1/2 tsp chopped green chilies
- 1/2 cup chopped pineapple
- 1/4 cup chopped roasted cashew
- 1/2 tsp melted ghee
- salt to taste
METHOD
- Add ghee to a kadhai and add the jeera and green chillies
- Once it splutters add the ginger
- Cook for a minute
- Add the roasted cashew and pineapple
- Add the cooked and washed rajgira and mix.
- Cook till the flavours are incorporate
NOTE
- I cook a large batch of rajgira
- wash and drain it to get a non sticky grain that can be used in many way
