SABUDANA KHICHDI

Navratri special Sabudana Khichdi
Ingredients
- 1 cup ready sabudana
- 1 potato boiled and cut in cubes
- ½ cup pumpkin cubes, boiled/steamed
- 8 tbsp roasted peanuts
- ½ tsp whole cumin
- pinch of turmeric powder
- 1 tsp grated ginger
- few green chillies chopped
- pinch of pepper
- 2 tbsp of ghee
- 2 tbsp of chopped coriander leaves
Method
- In a pan put add the ghee. When the ghee is warm add the whole cumin.
- When the cumin starts to splutter.
- Add the turmeric powder. Stir it.
- Add the grated ginger and black pepper. Stir for a minute or so.
- Add the chopped green chillies. Mix it in.
- Now add the roasted peanuts and mix it in with the masala.
- Add the cooked potato and pumpkin. Mix it in.
- Now add the sabudana. Mix it in.
- Add the sendha salt to taste. Mix and stir for few seconds.
- Cover and cook on low flame for few minutes. Stir in between.
- Add the chopped coriander leaves.
- Mix it in.
- Ready.
