TAHINI

TAHINI - Simrun Chopra

Tahini is a paste made from sesame seeds and is common in Mediterranean and Middle East Cuisines. It’s easy to make and use as a dip or even a spread.

If you have ever made a nut butter or peanut butter, the process is extremely similar.

Ingredients :  

  • 1 cup sesame seeds
  • 2 tablespoons neutral flavored oil such as grape seed, vegetable or a light olive oil ( optional)
  • 1tsp of honey
  • ½ tsp salt, adjust to taste

Method :

  • Add the sesame seeds to a wide pan over medium to low heat
  • Stir continuously until the seeds become fragrant and very lightly brown coloured (not brown) – approx. 3 to 5 mins
  • Transfer the toasted seeds to a tray or large plate lined with a baking sheet or paper napkin and cool completely.
  • Add the cooled sesame seeds a food processor or a mixer grinder and grind to a crumbly paste. About 1 min Stop periodically and use a spatula to push down or scrape down the bottom and side of the sesame paste.
  • Add the honey, salt and 1tsp of oil and grind till you get a smooth consistency. It should be pourable with no grits or pieces. Keep grinding and scraping down the sides as you go.
  • Check the seasoning and add as needed. Add a little more oil if you want a more pourable consistency.
  • Process 5 to 10 seconds to mix it in.
  • Serve with sweet potato fried, my seeds crackers or roasted carrots.
