AMARANTH KHICHDI

This is similar to the sabudana khichdi however I have used rajgira for it's nutritional value.
INGREDIENTS
- 1/2 cup cooked amaranth
- 1 tsp chopped corriander leaves
- 1/2 tsp chopped ginger
- 1/2 tsp jeera
- 1/4 cup chopped roasted peanuts
- 1/2 tsp finely chopped green chilli
- 1 dried fig chopped small
- 1/2 tsp melted ghee
- salt to taste
METHOD
- Add the ghee to a kadhai and add the jeera, ginger and green chillies and cook till the ginger is slightly brown
- Add the remaining ingredients and cook till all flavours are incorporated, about 2 mins
NOTES
I pre cook the amaranth or rajgira, then wash of the sticky starch and drain it to get a dry crunchy texture grain.
