AMARANTH KHICHDI

AMARANTH KHICHDI - Simrun Chopra

This is similar to the sabudana khichdi however I have used rajgira for it's nutritional value. 

 

INGREDIENTS 

  • 1/2 cup cooked amaranth 
  • 1 tsp chopped corriander leaves 
  • 1/2 tsp chopped ginger 
  • 1/2 tsp jeera 
  • 1/4 cup chopped roasted peanuts 
  • 1/2 tsp finely chopped green chilli
  • 1 dried fig chopped small 
  • 1/2 tsp melted ghee 
  • salt to taste

 

METHOD 

  • Add the ghee to a kadhai and add the jeera, ginger and green chillies and cook till the ginger is slightly brown
  • Add the remaining ingredients and cook till all flavours are incorporated, about 2 mins

NOTES 

I pre cook the amaranth or rajgira, then wash of the sticky starch and drain it to get a dry crunchy texture grain.
