Cauliflower Stem & Leaves ki Sabzi

Ingredients
  • Stems and leaves from 6-8 cauliflower 
  • 1 big onion chopped in cubes 
  • 10-12 pods of garlic cut into small pieces 
  • 1-2 medium size potatoes cut into strips 
  • 1 1/2 tbsp of oil (preferably mustard oil)
  • Few green chillies according to taste 
  • Salt to taste 
  • Red chilli powder to taste 
  • 1/2 tsp turmeric powder 
  • 1/4 tsp cumin powder (optional)
  • 1/4 tsp coriander powder (optional)

Method
  • Remove the stems and leaves from the cauliflower
  • Wash the stems and leaves well then cut both into small pieces
  • Wash and cut again after cutting and keep in a strainer so that excess water drains off
  • Keep aside
  • Cut the potatoes into strips ,not very thin or thick
  • Keep aside
  • Take a kadhai add the oil ,preferably mustard oil
  • Heat the oil ,then add the chopped onion and garlic
  • Stir fry till onion becomes translucent then add the cut potatoes
  • Add the slitted green chillies according to taste
  • Next add salt to taste
  • Then add red chilli powder to taste
  • Add turmeric powder and mix it in 
  • Stir fry for few minutes
  • Add cumin powder, this is optional
  • Add coriander powder, this is optional
  • Now add the chopped cauliflower leaves and stem
  • Mix it in nicely and stir fry for 4-5 minutes
  • Cover and cook on low flame stirring in between.
  • Cook till done .
NB: the stems and leaves used here is the stems of 5-8 cauliflower.
