Cauliflower Stem & Leaves ki Sabzi
Ingredients
- Stems and leaves from 6-8 cauliflower
- 1 big onion chopped in cubes
- 10-12 pods of garlic cut into small pieces
- 1-2 medium size potatoes cut into strips
- 1 1/2 tbsp of oil (preferably mustard oil)
- Few green chillies according to taste
- Salt to taste
- Red chilli powder to taste
- 1/2 tsp turmeric powder
- 1/4 tsp cumin powder (optional)
- 1/4 tsp coriander powder (optional)
Method
- Remove the stems and leaves from the cauliflower
- Wash the stems and leaves well then cut both into small pieces
- Wash and cut again after cutting and keep in a strainer so that excess water drains off
- Keep aside
- Cut the potatoes into strips ,not very thin or thick
- Keep aside
- Take a kadhai add the oil ,preferably mustard oil
- Heat the oil ,then add the chopped onion and garlic
- Stir fry till onion becomes translucent then add the cut potatoes
- Add the slitted green chillies according to taste
- Next add salt to taste
- Then add red chilli powder to taste
- Add turmeric powder and mix it in
- Stir fry for few minutes
- Add cumin powder, this is optional
- Add coriander powder, this is optional
- Now add the chopped cauliflower leaves and stem
- Mix it in nicely and stir fry for 4-5 minutes
- Cover and cook on low flame stirring in between.
- Cook till done .
