Creamy Cutlets

  • 1 small to medium size onion chopped fine
  • 2-3 cloves of garlic chopped fine
  • 1 cup cauliflower cut into small pieces
  • 1/3 cup green peas
  • 1 cup chopped carrots ,finely cut into cubes
  • 10-12 french beans cut into small pieces
  • 5-7 mushrooms cut into small pieces
  • 1/4 cup celery(just the stems cut into tiny pieces)
  • Salt to taste
  • Red chilli flakes to taste
  • Pinch of black pepper powder
  • 2 tbsp breadcrumb for the mixture
  • Breadcrumbs as per requirement ,for the cutlets
  • 3 tbsp of oil/butter

Ingredients for the sauce
  • 1/2 ltr milk
  • 3 tbsp of refined flour (maida)
  • 1 bay leaf
  • Salt to taste
  • Pinch of black pepper powder

  • Take a kadhai ,add the oil/ butter to the kadhai
  • Warm the oil / butter then add the onion and stir fry for few seconds
  • Then add the garlic and stir fry for 1 minute or so
  • Now add the celery and fry for few seconds
  • Then add the vegetables one by one starting with the ones which take longer to cook
  • Add the peas stir fry for few minutes
  • Next add the french beans and stir fry for few minutes
  • Now add the carrots , cauliflower and a pinch of salt and mix it in well
  • Then add the mushrooms and stir fry till the vegetables are 90% done
  • Add the chilli flakes and the black pepper powder
  • Mix it in well
  • Stir fry the vegetables for few minutes and mash them a little bit .
  • The vegetables are ready

Method for the sauce
  • Take a pan add the milk (should be boiled before and kept aside)
  • In a small bowl put the flour and add 1/4 cup milk in it and mix it with the flour to make a smooth paste ,then add this paste to the milk and start cooking on low flame stirring continuously, or else lumps will form .
  • Keep stirring till you get a real thick consistency like a thick custard (keeping in mind that on cooling the sauce will become thicker )
  • Add salt to taste ,should be a little less than what is required ,as the vegetables also have salt .
  • When the sauce becomes thick ,discard the bay leaf
  • Let the sauce cool down .
  • When the sauce cools down add it to the vegetables and mix everything really well.
  • Can check for salt now ,adjust according to requirement.
  • When the mixture cools down add the bread crumbs to it and mix it well .
  • Brush some oil on your palm place a heaped tbsp of the mixture and make it into a flat cutlet
  • In a plate put the breadcrumb
  • Place the cutlet on the breadcrumb plate ,cover the cutlet with the breadcrumb on both sides
  • Place it on your palm and press the breadcrumb on it
  • Brush a little oil on a pan ,when it becomes hot place the cutlet on it
  • After few minutes flip the side gently ,then cover and cook till both sides are browned .
  • Done
