Hara Bhara Lauki - Simrun Chopra

Ingredients:
500gms of bottle gourd
Peeled and cut into small cubes
Cut and keep aside
2 tbsp oil/ghee
1/2 tsp whole cumin
1/4 tsp asafoetida
1 medium size onion chopped
1 1/2 tsp of grated ginger
Few green chillies chopped 3-4 tbsp of chopped coriander leaves
1/4 tsp turmeric powder Salt to taste

Method
Take a kadhai add the ghee/oil
Let it warm a little, then add the whole cumin
When the cumin starts spluttering add the asafoetida
Keep fir 15-20 seconds
Next add the chopped onion and stir fry till they become little translucent
Then add the grated ginger
Saute for few minutes then add the cut green chillies
Saute for few minutes till the onion starts becoming soft and changing color
Now add the chopped coriander leaves
Mix it in well and saute for a minute or so
Now add the cut bottle gourd and mix it in with the onion madala
To this now add the turmeric powder
Next add salt to taste
Saute for few minutes
Lower the flame and cover and cook till the bottle gourd is cooked ,do keep stirring in between.
Done
Serve with paratha/roti and curd .
