Hara Bhara Saag - Mix veg with Spinach - Simrun Chopra

Ingredients
  • 1 bundle spinach (approximately 500-600 gms)
  • Few whole green chillies 
  • 1 carrot cut into sem circles
  • 1/2 green capsicum cut into cubes 
  • 1/2 red capsicum cut into cubes 
  • 1 onion cut into 4(optional)
  • 5-8 mushrooms cut into 4 pieces each 
  • 1/2 cup cooked peas 
  • 8-10 cashews 
  • 2 tsp melon seeds 
  • 1 tsp whole cummin 
  • 2 tsp whole coriander seeds pounded coarsely 
  • Few whole red chillies 
  • 1 onion chopped 
  • 1 tsp ginger garlic paste 
  • 2 tomatoes chopped 
  • Red chilli powder to taste 
  • Salt to taste 
  • 1/2 tsp garam masala 
  • 1/4 tsp turmeric powder 
  • 1/2 tsp coriander powder 
  • 1/2 tsp cummin powder 
  • 1 tbsp of dry kasturi methi leaves 
  • 2 1/2 tbsp of ghee / oil 

For the tadka (optional )
  • 1/2 tbsp of ghee 
  • 5-6 whole pods of garlic 
  • 1/2 tsp kasmiri red chilli 
  • 1 tomato cut into big pieces 

Preparation
  • Blanch the spinach 
  • Clean and cut the spinach coarsely 
  • Place it in a pan on low flame 
  • Cover and keep for few minutes 
  • Flip the spinach and cook for few minutes 
  • Remove from flame and let it cool down 
  • Then grind the spinach with few green chillies and keep aside .
  • Grind the cashews and melon seeds together in a grinder to make a paste .
  • Keep aside .
  • Take a pan add 1 tsp of ghee/oil
  • Warm the oil and swirl it around 
  • Add the cut vegetables with a pinch of salt and stir fry on full flame till the vegetables are more than half done .
  • Remove and keep aside 

Method
  • Take a kadhai 
  • Add the ghee 
  • When the ghee in warm add the whole red chillies, cummin seeds and the ground coriander 
  • Stir till the cummin starts spluttering 
  • Add the chopped onion 
  • Stir fry till the onions become beige 
  • Then add the ginger-garlic paste 
  • Saute till thee raw smell of the ginger garlic goes 
  • Now add the chopped tomatoes 
  • Saute till the tomatoes become mushy 
  • Can add 2-3 tbsp of water to saute 
  • Now add the salt ,turmeric, red chilli powder, cummin powder, coriander powder 
  • Saute for few minutes 
  • Can add few tbsp of water and saute 
  • When the masala becomes a nice reddish colour 
  • Add 1/2 tsp garam masala 
  • Saute for few minutes 
  • Now add the dry kasturi methi leaves 
  • Saute for few minutes 
  • Add the ground spinach 
  • Mix it in well in the masala 
  • When the spinach starts bubbling 
  • Lower the flame and cook till the water of the spinach dries up 
  • Keep stirring 
  • When the spinach becomes thick 
  • Add the cashews melon paste mixed with a little water 
  • Mix it in well 
  • Cook for few minutes 
  • Now add the vegetables and cook on low flame for few minutes 

Now the tadka
  • Take a small kadhai 
  • Add the ghee 
  • When the ghee is warm add the whole cummin and garlic 
  • Stir for few minutes and red chilli powder and cut tomato 
  • Stir fry few seconds 
  • Now add to the spinach .
  • Done 
  • Serve with rotis.
