Lasuni Ridge Gourd
Ingredients
- 750 gms -1 kg ridge gourd
- Peeled and cut into 1-2 "piece
- 3-4 whole red chillies
- 3-4 whole slitted green chillies
- 12-15 pods of garlic chopped coarsely
- 2 medium size onions finely sliced
- 1/2 tsp turmeric powder
- Salt to taste
- 3-4 tbsp of chopped coriander leaves
- 2 tbsp of oil
Method
- Take a kadhai add the oil ,warm the oil a little
- When the oil is warm add the whole red chillies and the slitted green chillies
- Stir fry for few seconds
- Then add the coarsely chopped garlic
- Stir fry till the garlic changes colour
- Then add the sliced onions and stir fry
- Stir fry till the onions become soft and changes to a beige brown colour .
- Now add the cut ridge gourd and mix it in well
- Then add the turmeric powder and mix it in
- After few minutes add the salt and mix it in
- Cover and cook for few minutes
- Do stir in between, the ridge gourd will leave water ,it will cook in it .
- When the ridge gourd is done add the chopped coriander leaves
- Mix it in nicely.
- It's done .
- NB: can leave a little gravy or make it dry ,on personal preference.
