Lasuni Ridge Gourd

Lasuni Ridge Gourd - Simrun Chopra

Ingredients
  • 750 gms -1 kg ridge gourd 
  • Peeled and cut into 1-2 "piece 
  • 3-4 whole red chillies 
  • 3-4 whole slitted green chillies 
  • 12-15 pods of garlic chopped coarsely 
  • 2 medium size onions finely sliced 
  • 1/2 tsp turmeric powder 
  • Salt to taste 
  • 3-4 tbsp of chopped coriander leaves 
  • 2 tbsp of oil 

Method
  • Take a kadhai add the oil ,warm the oil a little 
  • When the oil is warm add the whole red chillies and the slitted green chillies 
  • Stir fry for few seconds 
  • Then add the coarsely chopped garlic 
  • Stir fry till the garlic changes colour 
  • Then add the sliced onions and stir fry 
  • Stir fry till the onions become soft and changes to a beige brown colour .
  • Now add the cut ridge gourd and mix it in well 
  • Then add the turmeric powder and mix it in 
  • After few minutes add the salt and mix it in 
  • Cover and cook for few minutes 
  • Do stir in between, the ridge gourd will leave water ,it will cook in it .
  • When the ridge gourd is done add the chopped coriander leaves 
  • Mix it in nicely. 
  • It's done .
  • NB: can leave a little gravy or make it dry ,on personal preference.
