Masala Aloo and Onion Paratha

Ingredients
1 boiled potato mashed (medium - big)
3 onions chopped
1 tsp grated ginger
1/2 tsp whole cummin
1 tbsp of chopped coriander leaves
2 tbsp oil
Wheat flour to be kneaded and kept aside

Masala to be ground coarsely together
1/2-3/4 tbsp of coriander seeds
1/4 tsp peppercorns
1/2 tsp carom seed (ajwain)
1/2 tsp fennel (sauf)
1/4 tsp asafoetida
1-2 green chillies
1/2 tsp sugar
1 tsp kasturi methi
1/2 tsp dry mango powder
1/2 tsp kashmiri red chilli powder
Salt
Keep aside

Method
Take a kadhai
Add the oil
Warm the oil
Add the cummin seeds
When it starts spluttering
Add the chopped onions and grated ginger
Stir fry for few minutes ,till it starts to become soft
Add the coarsely ground masala
Stir fry for few minutes
Add the mashed potato
Saute till all is amalgated together
Add the chopped coriander leaves
Mix well
Remove and keep aside
Make balls of the dough
Roll it out a little
Place potato mixture on top
Gradually bring the sides up and close at the top
Sprinkle some loose flour
Roll it out gently
Heat a tava
Place the rolled out dough on it
Make the flame low
When little bubbles come on top
Make the flame full and flip the side
Brush with oil/ghee and roast on both sides till it gets a little brown .
Repeat the same with the rest .
Serve with raita .
