Ingredients
- 350 gms of chicken, boneless, cut into thin pieces ( or paneer / mushroom / baby corn)
- 1/2 tsp oyster sauce
- 1 1/2 tsp light soya sauce
- 1/2 tsp dark soya sauce
- 1/2 tsp sesame oil
- 1/2 tsp cornflour
- Pinch of salt
- 1/4 tsp sugar
- Marinate all of the above and keep aside for 20-30 minutes
Remaining ingredients
- 1 tsp chopped garlic
- 6-8 whole pods of garlic sliced
- 1/4 cup scallions cut in 1"pieces
- 12-15 green chillies cut in diagonal, in 1 " pieces
- 1/4 tsp oyster sauce
- 1 tsp light soya
- 1/4 tsp sugar
- 3 tbsp oil
Method
- Take a wok or pan and add 2 tbsp of oil
- Heat the oil ,when the oil is hot add the marinated chicken and stir fry continuously on high flame
- When the chicken is more or less done
- Add all the green chillies and stir fry for a minute or two
- Remove from wok and keep aside
- In the same wok add the remaining oil, when the oil is warm add the chopped garlic, stir then immediately add the sliced garlic
- Stir fry for 30-40 seconds
- Now add the scallions and stir fry for few seconds
- Switch of the flame and add the light soya and the oyster sauce
- Mix it in well
- Put on the fame stir for few seconds
- Then add the chicken ,sugar and pinch of salt .
- Stir fry on high flame for few seconds.
- Done
- Serve with rice or fried rice
