My Mom's Chilli Chicken

  • 350 gms of chicken, boneless, cut into thin pieces ( or paneer / mushroom / baby corn) 
  • 1/2 tsp oyster sauce 
  • 1 1/2 tsp light soya sauce 
  • 1/2 tsp dark soya sauce 
  • 1/2 tsp sesame oil 
  • 1/2 tsp cornflour 
  • Pinch of salt 
  • 1/4 tsp sugar 
  • Marinate all of the above and keep aside for 20-30 minutes 

Remaining ingredients
  • 1 tsp chopped garlic 
  • 6-8 whole pods of garlic sliced 
  • 1/4 cup scallions cut in 1"pieces 
  • 12-15 green chillies cut in diagonal, in 1 " pieces 
  • 1/4 tsp oyster sauce 
  • 1 tsp light soya 
  • 1/4 tsp sugar 
  • 3 tbsp oil 

  • Take a wok or pan and add 2 tbsp of oil 
  • Heat the oil ,when the oil is hot add the marinated chicken and stir fry continuously on high flame 
  • When the chicken is more or less done 
  • Add all the green chillies and stir fry for a minute or two 
  • Remove from wok and keep aside 
  • In the same wok add the remaining oil, when the oil is warm add the chopped garlic, stir then immediately add the sliced garlic 
  • Stir fry for 30-40 seconds 
  • Now add the scallions and stir fry for few seconds 
  • Switch of the flame and add the light soya and the oyster sauce 
  • Mix it in well 
  • Put on the fame stir for few seconds 
  • Then add the chicken ,sugar and pinch of salt .
  • Stir fry on high flame for few seconds. 
  • Done 
  • Serve with rice or fried rice
