Mexican Red Bean Rice

Mexican Red Bean Rice - Simrun Chopra

Ingredients
  • 1 cup red beans (rajma ,raw)
  • 1 -11/2 cup boiled rice( ideally one day old ) 
  • 1 onion chopped 
  • 2 tsp chopped garlic 
  • 1 green pepper chopped 
  • 4-5 flat beans finely sliced 
  • 8-10 mushrooms cut into 4 
  • Salt to taste 
  • 1/2 tsp cummin powder 
  • 1/2 tsp black pepper powder 
  • 1 tsp chilli flakes 
  • 3 tbsp oil 

Preparation
  • Wash and soak the red beans overnight or can soak for 7-8 hours 
  • Take a pressure cooker add 3-4 cups of water 
  • Put the soaked red beans in a bowl and sprinkle it with salt and place in the cooker 
  • Steam the red beans for 35-40 mins on low flame after the first whistle 
  • When done remove the cooker from the flame and let it open naturally .
  • Remove the red beans and keep aside 

Method
  • Take a pan add the the oil ,when the oil gets warm 
  • Add the chopped garlic and stir fry for few minutes till it starts changing colour 
  • Then add the chopped onions to the pan and stir fry with the garlic ,till the onion becomes translucent 
  • Add to this the finely cut flat beans and stir fry for few minutes 
  • Now add the mushrooms and stir fry for few minutes stirring constantly so that the mushrooms don't start leaving water 
  • Add the cut green pepper and mix it in well and stir fry for 30-40 seconds 
  • Now add the red beans to the pan and mix everything in together 
  • To this add the salt ,cummin powder, black pepper powder and red chilli flakes 
  • Stir it all in well together 
  • Cook for few minutes 
  • Finally add the cooked rice stir it in gently and mix everything well in together .
  • Done .
