Radish & Carrot Sabzi

Ingredients
  • 1 bid white radish (cut I the centre ,then cut in semi circles )
  • Cut the stems of the radish into thin strips and chop the leaves in to strips also 
  • 1 big carrot (cut in center then cut in semi circles)
  • 2 tbsp of ghee /oil 
  • 1/4 tsp asafoetida 
  • 1/4 tsp ajwain 
  • (Carom/caraway seeds)
  • 1/4 tsp turmeric powder 
  • 1/2 tsp chilli flakes 
  • 1/4 tsp coriander powder 
  • 1/4 tsp cummin powder 
  • 1/4 tsp dry mango powder 
  • 1/4 tsp black salt 
  • Salt to taste 

Method
  • Take a pan, add the ghee 
  • Let the ghee warm a little 
  • Then add the asafoetida and the ajwain seed
  • Stir fry for few seconds 
  • Then add to the pan turmeric powder and red chilli flakes 
  • Stir the masala for few seconds 
  • To the masala add the cut vegetables and stir fry for few minutes 
  • Then add the black salt and mix it in 
  • Cover and cook on low flame till the vegetables are half done 
  • When the vegetables are half done add the coriander powder, cummin powder, dry mango powder and salt to taste 
  • Stir fry for few minutes 
  • Then cover and cook till the vegetables are totally done ,stirring in between. 
  • Ready to eat .
