Radish & Carrot Subzi

Ingredients
1 bid white radish (cut in the centre,then cut in semi circles )
Cut the stems of the radish into thin strips and chop the leaves in to strips also
1 big carrot (cut in center then cut in semi circles)
2 tbsp of ghee /oil
1/4 tsp asafoetida
1/4 tsp ajwain (Carom/caraway seeds)
1/4 tsp turmeric powder
1/2 tsp chilli flakes
1/4 tsp coriander powder
1/4 tsp cumin powder
1/4 tsp dry mango powder
1/4 tsp black salt
Salt to taste
 
Method
  • Heat the ghee in a pan then add the asafoetida and the ajwain seed and stir fry for few seconds
  • Add the turmeric powder and red chilli flakes and stir the masala for few seconds
  • To the masala add the cut vegetables and stir fry for few minutes
  • Then add the black salt and mix it in
  • Cover and cook on low flame till the vegetables are half done
  • When the vegetables are half done add the coriander powder, cumin powder, dry mango powder and salt to taste
  • Stir fry for few minutes
  • Then cover and cook till the vegetables are totally done,stirring in between.
  • Serve
