Ragi Khakhra Chat
Ingredients: (1 Serving)
For Khakhra:
- 1 tbsp ragi flour
- 5g wheat flour
- 5g besan (chickpea flour)
- ⅛ tsp whole jeera (cumin seeds)
- ⅛ tsp carom seeds
- Pinch of turmeric powder
- Pinch of chili powder
- ½ tsp kasuri methi (optional)
- Salt, according to taste
- Lukewarm water (for kneading the dough)
For Khakhra Chat:
- 20g chopped onion
- 25g chopped tomato
- 50g chopped capsicum
- ½ tsp lemon juice
- Salt, according to taste
Method:
To Make Khakhra:
1. In a bowl, combine ragi flour, wheat flour, besan, whole jeera, carom seeds, turmeric powder, chili powder, kasuri methi (if using), and salt. Mix well.
2. Gradually add lukewarm water and knead the mixture into a dough.
3. Divide the dough into small balls (around the size of an amla) and roll them out into thin circles using a rolling pin or by pressing between two sheets of butter paper.
4. Heat a tawa (griddle) and cook the rolled khakhra on medium heat until they become crispy. You can use a cloth or flat spatula to press them while cooking.
5. Once the khakhra is ready, set it aside.
To Make Khakhra Chat:
1. Break the khakhra into small pieces and place them in a mixing bowl.
2. Add the chopped onion, tomato, and capsicum to the khakhra pieces.
3. Season with salt and squeeze lemon juice over the mixture.
4. Toss the ingredients together until well mixed.
5. Your Khakhra Chat is ready to serve!
