Sweet Potato Sabzi
Sweet Potato Subzi
(Can add instead of potatoes in a masala dosa )

  • 500 gms sweet potato
  • 2" pc ginger cut into julienne
  • 15-20 curry patta leaves
  • 5-7 whole green chillies (add more or less depending on personal preference)
  • Few whole red chillies broken in half
  • 1 tsp panch phoren
  • Salt to taste
  • Red chilli powder to taste
  • 1/2 tsp turmeric powder
  • 2-3 tbsp of tamarind pulp ( or on personal choice )
  • 1 tbsp bengal gram
  • 3 tbsp mustard oil/refined oil

  • Steam /boil the sweet potatoes.When it is done peel and cut into pieces and keep aside.
  • Take a kadhai add the oil .Warm the oil for few minutes .
  • Then add the bengal gram and stir fry till it becomes beige in colour
  • Immediately add the panch phoren and whole red chillies
  • Stir fry till fragrant then add the curry patta, fry for few seconds
  • Now add the cooked sweet potatoes and gently stir it in
  • Then add the salt ,turmeric ,red chilli powder and whole green chillies and stir fry for few minutes .
  • Make the flame low and cook for few minutes so that all the ingredients infuse into the sweet potato ,stirring in between.
  • Finally add the tamarind pulp and mix it in gently .
  • Cook for 30-40 seconds and remove from flame .
  • Ready
