TANGY BHINDI MASALA - Simrun Chopra

Tangy Bhindi Masala (Lady's finger)

Ingredients

  • 1/2kg bhindi (dried throughly and cut into 1"pieces)
  • 1 big onion, chopped small
  • 2 onions, cut into 4 large chunks / pieces
  • 1 big tomato, chopped small
  • 10-12 whole garlic pods, whole
  • 10-15 curry leaves
  • 2-3 tsp of tamarind pulp
  • 1/4 tsp methi/ fenugreek seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp whole cumin
  • 2-3 whole red chillies
  • 2-3 tbsp of oil
  • Salt, to taste
  • Red chilli powder, to taste
  • 1/4 tsp coriander powder
  • 1/4 tsp cumin powder


Method

  • Heat the oil in a pan on medium flame
  • Once the oil is warm add in the whole red chillies ,mustard seeds, cumin seeds & fenugreek seeds and stir for a few seconds till it splutters
  • Add the small chopped onion to the pan and stir fry till slightly translucent or transparent
  • Then add the whole garlic pods and saute till the onions become totally translucent
  • Add the chopped tomato and saute for few minutes, till tomato becomes a little soft
  • Add the salt ,turmeric and red chilli powder. saute for few seconds then add the coriander and cumin powder
  • Saute for 5-10 minute, till the masala becomes totally soft and gets a nice reddish colour .
  • Add the curry leaves and saute for few minutes
  • Now add the cut lady's finger and mix it well and saute for few minutes, then lower the flame and let it cook
  • When the lady's finger is half done add the cut onions and mix it in
  • Let it cook on low flame till the lady's finger is totally done, while stirring occasionally
  • Lastly add the tamarind pulp and mix it in throughly
  • Cook for few minutes and remove from flame
  • Serve with a side of rice and curry 

Note :

  • To prepare the Tamarind pulp take a small ball ( approx size of a table tenins ball) of tamarind and add it to 1/4 cup of hot water and let it soak for atleast 10 minutes. Strain it to get a thick pulp. Add the tamarind based on your taste preference. 
  • Tamarind can be replaced with "amchur" dry mango powder. Please add in small quantities and mix and taste to get a sourness of your preference.This will not give you the same flavour as tamarind pulp
  • To prepare the lady's finger : Wash the lady fingers and place on a cloth and dry completely before using
