Tinda (Round Gourd) ki Subzi - Simrun Chopra

Ingredients
  • 500 gms Tinda ,wash ,peel and cut each tinda in 4 pieces .Keep aside .
  • 3 tbsp oil/ghee
  • 1 cup sliced onions
  • 1/2 cup chopped coriander leaves
  • 2-3 green chillies chopped
  • 1/2 tsp ginger paste
  • Salt to taste
  • Red chilli powder to taste
  • 1/4-1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/4 tsp asafoetida
  • 1/2 tsp whole cumin

Method
  • Take a pan ,add the oil/ghee to it .
  • Heat/warm the oil/ghee
  • Then add the asafoetida and whole cumin
  • Stir fry for few seconds
  • Now add the sliced onion and stir fry till it becomes translucent
  • Add the ginger paste and stir fry till the raw smell goes .
  • Can add 2-3 tbsp of water to the pan if the masala is catching at the bottom
  • Next add the chopped green chillies and saute for few seconds
  • Add the salt ,turmeric and red chilli powder
  • Saute for few minutes
  • Now add the coriander
  • powder and saute for few seconds .
  • Then add the cut round gourd and mix it in well
  • Saute for few minutes
  • Add 1/2- 1 cup of water to the pan
  • When the water starts bubbling lower the flame and cover the pan and cook till the vegetable is done .
  • Finally add the chopped coriander leaves, mix it in well ,cover and cook for few minutes
  • Then done .
  • Serve with roti and raita .
  • Note : can keep a little gravy or make it dry on personal choice.
