Healthier Chopsuey

Ingredients

  • 3 small pkts of noodles (like maggi size pkts) boiled and kept aside
  • 3 cup stock chicken/vegetable stock
  • Salt to taste
  • Pepper to taste
  • 2 tsp sugar
  • 1 tbsp ginger julienne
  • 2 tsp chopped garlic
  • 1 chopped green chilli
  • 1 cup sauted chicken (if making non veg, cut in cubes)
  • 1 doubled fried egg (optional)
  • 3 tbsp dark soya sauce
  • 3 tbsp cornflour
  • 2 medium carrots cut into strips
  • 15-20 pcs of beans cut into strips
  • 1 big onion sliced
  • 2medium sized capsicum sliced (can use red,yellow &green)
  • 1 1/2 cup sliced cabbage
  • 10-15 spinach /pok choi cut into halves
  • 1 1/2 cup Broccoli/cauliflower sliced in thin florets
  • 1 cup Bottle gourd sliced thinly (discard flesh inside)
  • 3 tbsp oil

 

 

 

Options : can also add

  • 1 cup mushroom sliced thinly
  • 1 cup zucchini sliced thinly
  • 1 cup ridge gourd sliced thinly (minus seeds)
  • 1 cup shoots of sprouts
  • 2 tbsp chopped spring onions .

 

Method :

The noodles

  • Toss the noodles in a little oil and put them in air fryer and let it brown or get crisp
  • Or
  • Put 1tsp oil in frying pan Heat oil ,put the noodles on the pan and let it become crisp ,turn over n place on a serving plate .
  • In a kadhai heat 1tbsp oil, put half the chopped garlic and few pieces of ginger strips ,stir for a minute, add chicken ,saute on high flame till chicken cooks .
  • Remove n keep aside .

 

The Sauce

  • In same kadhai add 2 tbsp oil
  • Heat oil
  • Add remaining garlic and sliced ginger
  • Stir till raw smell goes
  • Add chopped green chillies
  • Add carrots and beans
  • Stir on high flame
  • Add onions and Bottle gourd
  • Stir stir stir
  • Add Broccoli florets
  • Stir ( this is why it’s called a stir fry, you have to keep stirring)
  • Add capsicum
  • Stir again
  • Add cabbage and spinach
  • Stir and mix well on high flame even if you’re fed up of stirring
  • Add salt,pepper and sugar
  • Mix well ( a different way to say “stir”!)
  • Add stock chicken/vegetable (Stock Should be boiling )
  • Mix well
  • Add 3 tbsp dark soya
  • Mix well
  • (At this stage one can taste the gravy to chk salt and flavours)
  • Add cornflour to boiling gravy and stir in quickly .
  • At this point add the chicken (if using)
  • As it starts thickening turn off flame .
  • Pour over the noodles.
  • Garnish with chopped spring onions and top with one double fried egg ( if using)
  • Serve hot hot else the noodles will start to get soggy ( no that’s not a typo, I wrote “hot’ twice)

 

 

Notes :

  1. Make the sauce ahead of time but leave it very liquidy
  2. Boil the noodles and keep aside
  3. Before serving crisp up the noodles in the air fryer or on the Pan and heat the sauce. The sauce will thicken when you heat it.
  4. Serve hot
  5. This will help you prepare ahead and just do the bare minimum before serving while still giving you the same effect
