Palak Paneer Stir-Fry with Roti

Ingredients

  • Paneer (low-fat): 60g, cubed (adjusted for protein content)
  • Spinach (fresh): 1 cup, chopped
  • Onion: 1 small, chopped
  • Tomato: 1 small, chopped
  • Garlic: 2 cloves, minced
  • Spices:
    • 1/2 tsp cumin seeds
    • 1/2 tsp turmeric powder
    • 1/2 tsp garam masala
    • Salt to taste
  • Oil: 1 tsp
  • Whole wheat roti: 1 (30g)

Instructions

  1. Prepare the tempering:

    • Heat oil in a non-stick pan over medium heat. Add cumin seeds and minced garlic. Sauté until fragrant.
  2. Cook the vegetables:

    • Add the chopped onion and tomato to the pan. Cook for 5 minutes, stirring occasionally, until softened. Add turmeric powder, garam masala, and salt. Mix well.
  3. Add spinach and paneer:

    • Stir in the chopped spinach and cook for 2-3 minutes until it wilts. Add the cubed paneer and gently toss everything together. Cook for another 2-3 minutes to allow the flavors to combine.
  4. Serve:

    • Serve the palak paneer stir-fry hot with a warm whole wheat roti.
