INGREDIENTS: 2 lt whole milk 2 Tablespoon Lime juice / 2 tbsp of vinegar Cheese cloth or muslin cloth METHOD: Bring the milk to a boil Once it boils add the lime juice/ vinegar. If the paneer and water do not separate add more lime juice/ vinegar As soon as the milk curdles switch off the heat Add 3 to 4 ice cubes to stop the paneer from cooking further Wait for a minute and then pour the water through a cheese cloth Keep the whey or paneer water aside Make a knot on the cheese cloth and gently squeeze the water out of the curdled milk Place the paneer (in the cheese cloth) on a plate and put a weight on top for atleast 30 mins or for upto an hour Remove cloth and cut into cubes
