Quinoa Soya Pulao

Feel free to add near zero calories foods like 

  • Spinach 
  • Coriander 
  • Spices like chillies, or different herbs to make it suit your taste. 
  • However you need to stick to the portion os quinoa and soya 

 

Ingredients:

  • Quinoa: 50g (1/4 cup, uncooked)
  • Soya chunks: 30g (soaked and squeezed)
  • Vegetables (carrot, beans, peas): 1 cup
  • Onion: 1 small, chopped
  • Tomato: 1 small, chopped
  • Ginger-garlic paste: 1 tsp
  • Spices: 1/2 tsp cumin seeds, 1/2 tsp garam masala, 1/4 tsp turmeric, salt to taste
  • Oil: 1 tsp

Instructions:

  1. Cook quinoa in 1 cup water and set aside.
  2. Heat oil, add cumin seeds, then sauté onion and ginger-garlic paste.
  3. Add chopped vegetables and tomato, sauté for 5 minutes.
  4. Add spices and soaked soya chunks, cook for 3-4 minutes.
  5. Mix in cooked quinoa and stir for 2 minutes.
  6. Serve with a side of our fermented onions. if your calorie permit you can add 3/4 cup of curd or cucumber raita for additional protein ( this will increase calories by approximately 100 calories)
