Quinoa Soya Pulao
Feel free to add near zero calories foods like
- Spinach
- Coriander
- Spices like chillies, or different herbs to make it suit your taste.
- However you need to stick to the portion os quinoa and soya
Ingredients:
- Quinoa: 50g (1/4 cup, uncooked)
- Soya chunks: 30g (soaked and squeezed)
- Vegetables (carrot, beans, peas): 1 cup
- Onion: 1 small, chopped
- Tomato: 1 small, chopped
- Ginger-garlic paste: 1 tsp
- Spices: 1/2 tsp cumin seeds, 1/2 tsp garam masala, 1/4 tsp turmeric, salt to taste
- Oil: 1 tsp
Instructions:
- Cook quinoa in 1 cup water and set aside.
- Heat oil, add cumin seeds, then sauté onion and ginger-garlic paste.
- Add chopped vegetables and tomato, sauté for 5 minutes.
- Add spices and soaked soya chunks, cook for 3-4 minutes.
- Mix in cooked quinoa and stir for 2 minutes.
- Serve with a side of our fermented onions. if your calorie permit you can add 3/4 cup of curd or cucumber raita for additional protein ( this will increase calories by approximately 100 calories)
