Secret Aampapad Tomato Chutney
Special Tomato Chutney
Ingredients
Method
Panch Phoren Recipe
1 tsp cumin seeds (jeera)
1 tsp fenugreek seeds (methi)
1 tsp mustards seeds (small black rai / sarson)
1 tsp nigella seeds (kalonji)
1 tsp fennel seeds (saunf)
1 tsp radhuni,optional
Combine all the ingredients and mix well.
Store in an air tight container as you would the individual seeds
Ingredients
- 1/2 kg tomatoes ,each cut into 8 pcs
- 1/3 -2/3 cup jaggery
- 2 tbsp raisins
- 5-6 dates, deseeded and cut into strips
- 100 gms sweet aampapad, cut into small cubes (optional)
- 3-4 whole red chillies
- 1 tsp panch phoren ( recipe at the end )
- 1 tsp panch phoren roasted and grounded
- Salt to taste
- Pinch of turmeric
- 2 tbsp of oil
- 1/2 tsp chilli powder (optional)
Method
- Dry roast 1 tsp of panch phoren in a pan on low heat, till it releases a lovely fragrance..
- Set aside to cool. Transfer the cooled panch phoren to a mortar and pestel and pound to a powdery consistency
- Warm the oil in a pan and add the remaining whole panch phoren along with whole dry red chillies
- Stir on low to medium heat till it starts spluttering or you get a nice fragrance
- Add in the chopped tomatoes and stir for few mins on medium heat.
- To the cooking tomatoes add the salt, turmeric and chilli powder and stir for few seconds. ( the chilli powder is optional if you prefer a sweet and spicy chutney)
- Lower the heat, cover and cook till the tomatoes are soft then add in the jaggery and mix well. ( avoid pounding or overmixing the tomatoes)
- Cover and continue to cook for few minutes then add in the raisins and cut dates and mix well .
- Cover and cook for few minutes on low heat .
- Add the roasted ground panch phoren and mix well.
- To finish off, add the cubes of aampapad and mix well
- Cook the chutney for a few minutes and it is ready to serve

Notes :
- This is a sweet sour chutney, if you want it spicier you can add 1/2 tsp chilli powder along with the turmeric and salt .
- You can add cashews along with the dates and raisins as well.
- Dates : avoid using lion dates and use the regular local dates

- Panch Phoren : this is usually readily available. Incase you don’t have this you can make a small quantity and use in multiple recipes. Recipe Below
