Tangy Sweet Pearl Onions
Ingredients
500 gms of pearl onions (tiny whole onions to be peeled and kept aside)
Ingredients to be roasted and ground to a paste :
- 3 tsp whole coriander seeds
- 1 tsp whole cumin seeds
- 1/2 tsp fenugreek seeds
- 1/2 tsp sesame seeds
- 1/4 tsp black mustard seeds
- 10 whole red chillies
- 3 pieces of coconut of 2 " each ,to be roasted seperately for 4-5 seconds only
All of the above to be ground to a paste ,can add a little water to make a smooth paste.
When done keep the paste aside
Remaining Ingredients
- 3 tbsp oil
- 4 -5 tbsp of tamarind pulp to be kept ready (soak a golf ball tamarind in warm water and keep aside )
- 1/2 tsp black mustard seeds
- 10-12 curry patta leaves
- 1/2 tsp whole cumin
- 1 whole red chilli broken in to half
- 1/4 tsp asafoetida
- Salt to taste
- Pinch of cumin powder
- Pinch of turmeric powder
- Pinch of coriander powder
- 1 tsp sambar powder
- 3 tbsp of jaggery powder
Method
- Take a kadhai add the oil and warm the oil a little
- When the oil is a little warm add the mustard seeds,
- Then add the whole cummin seeds
- Next add the whole red chilli broken in half
- Stir for 30-40 seconds
- Then add the the curry patta leaves
- Now add the asafoetida
- Stir for few seconds
- Next add the onions and stir fry til the onions start getting a little translucent
- Now add the tamarind pulp
- Mix it in
- Now add the salt and turmeric powder
- And add the ground paste to the onions
- Mix it in well
- Then add the coriander,sambar and cumin powder
- Mix everything in well
- Add 1 cup of water in the grinder so that the water gets the flavor of the ground masala
- When the water starts bubbling
- Lower the flame and cover and cook on low flame for few minutes.
- Check for salt ,chilli ,sourness and sweetness at this stage .
- Adjust according to taste and serve
NB : if you do not want to put sambar masala it can be omitted .
