These can be made at home or bought ready-made. The whole family can enjoy them — they are not just for the challenge.
Why fermented foods?
Fermentation creates live probiotic cultures that directly feed your gut microbiome. Including even a small amount daily — with meals, not instead of them — can meaningfully improve gut diversity over 4 weeks.

Traditionally Fermented Vegetables
Prep: 15 min
Ferments 2 to 5 daysWhole family
A simple brine ferment using any vegetables you have at hand — carrots, cauliflower, cabbage, radish. Salt and water do the work. No special equipment needed.
1
Chop vegetables into bite-sized pieces and pack tightly into a clean glass jar.
2
Dissolve 1 tsp salt per 240ml water and pour over vegetables until fully submerged.
3
Cover loosely and leave at room temperature for 2 to 5 days. Taste daily from day 2.
4
Once pleasantly sour, seal and refrigerate. Use within 2 weeks.
Live cultures
Very sour and pungentPlain or Fire variety
Simrun uses this brand herself. Kimchi is extremely sour with a strong smell — that is how you know it is alive. Start with a small spoonful alongside a meal.
The smell and sourness are signs of active fermentation, not spoilage. Simrun prefers Fire kimchi for the spice — choose Plain if you prefer milder.
Starting with protein helps manage hunger, stabilise blood sugar, and set the tone for the rest of the day.

Prep the night before, eat in the morning with zero effort. These are among the easiest high-protein, gut-friendly breakfasts on the plan.
Night Before Prep
Overnight Oats
Prep: 5 minReady by morningHigh fibre
Use quick-cooking oats. Mix with your choice of milk or yogurt, add chia seeds for extra fibre and protein, and refrigerate overnight. Customise with fruit, nut butter, or cinnamon in the morning.
Must use quick-cooking oats — steel-cut oats will not soften overnight without cooking.
Try the overnight dessert oats variation for something sweeter — same prep, different toppings.
Night Before Prep
High-Protein Gut-Healthy Chia Pudding
Prep: 5 minHigh proteinGut-friendly
Chia seeds absorb liquid and form a pudding-like texture overnight. Combine with high-protein yogurt or skyr for a protein-dense breakfast that also feeds your gut bacteria.
Adding skyr yogurt lifts the protein content significantly. Stir in Ceylon cinnamon for the added metabolic benefit.
Both are made from green moong dal and are naturally high in protein. No fermentation needed — these come together quickly and the whole family loves them.
High Protein
Green Moong Dal Dosa
Soak: 4 hrsCook: 15 minHigh protein
Soak green moong dal, blend into a batter, and cook like a regular dosa. Crisp edges, light inside, and far more protein than a regular rice dosa. A staple most households are already familiar with.
Pair with mint coriander chutney and a side of fermented pickled onions for an extra gut boost.
High-Protein Moong Dal Chilla with Yogurt and Mint Chutney
Soak: 4 hrsCook: 20 minHigh proteinWith chutney
Thicker than a dosa, more like a savoury pancake. The yogurt adds extra protein and a probiotic element. Served with mint coriander chutney — a complete meal in under 30 minutes.
The yogurt in the batter keeps the chilla moist and adds protein — use skyr for an even higher protein count.
For the days when you have no time. These are not full recipes — they are simple combinations you can throw together fast without compromising on nutrition.
