Andhra Biryani - Simrun Chopra

Ingredients
2 cups rice (raw)
(Wash and soak 2 cups of rice for 20-30 minutes)

  • 750 gms chicken 
  • 2 tbsp oil 
  • 2-3 bay leaf 
  • 1 cinnamon stick of 2"
  • 2-4 whole dry red chillies 
  • 2 star anise 
  • 2 medium tomatoes chopped 
  • 1 medium-big onion chopped 
  • Few slitted green chillies 
  • 1/4 cup coriander leaves chopped 
  • 1/4 cup mint leaves chopped 
  • 1 tsp ginger paste 
  • 1 tsp garlic paste 
  • Juice of 1 lemon / 1 tbsp lemon juice 
  • 1/2 tsp turmeric powder 
  • 1 tsp red chilli powder 
  • 1 tsp coriander powder 
  • Salt to taste
  • 1 tsp garam masala 
  • 1 tsp cumin powder 
  • 2 1/2 cups of water 

Marinate chicken:
  • 3-4 tbsp curd 
  • 1/2 tsp ginger 
  • 1/2 tsp garlic 
  • 1 tsp kashmiri red chilli 
  • 1/4 tsp pepper 
  • Little salt 
  • Marinate the chicken in all of the above and keep for 15-20 minutes 

Method
  • Take a pressure cooker add the oil and warm the oil Then add the bay leaves , cinnamon stick , whole red chillies , and star anise 
  • Stir fry for a minute or so Then add the chopped onions and slitted green chillies
  • When the onion becomes soft Add the chopped coriander and mint leaves
  • Stir fry for few minutes
  • Then add the chopped tomatoes 
  • Saute for few minutes till the tomatoes become soft
  • Next add the ginger garlic paste
  • Saute till the raw smell of the ginger-garlic goes
  • Then add the turmeric powder , red chilli powder , coriander powder , garam masala powder ,cumin powder and salt to taste
  • Saute for few minutes till the spices are infused with the masala 
  • Now add the marinated chicken and saute for 5-7 minutes
  • Next add the lime juice 
  • Saute for a minute or so 
  • Now add water in accordance to rice and chicken used .here I have use 2 cups of rice ,so water Put is 2 cups and 1 cup for the chicken, cook for few minutes on low heat
  • Now add the washed rice and mix it in well 
  • Check the salt at this stage .
  • Put the lid on the cooker and cook on full flame to a whistle ,then remove from heat after few seconds. 
  • Keep aside .Then let the cooker open naturally.
  • And done .
  • Serve with salad and curd /onion+tomato +cucumber raita 
  • Note : 
  • Can use a big pan to cook the biryani ,if you do not want to use a pressure cooker. 
  • When the water starts bubbling in the pan put the heat to low and cover the pan and cook till rice and chicken is cooked .
  • Do put a skillet/tava underneath the pan .
  • The heat then will come thru the skillet .
