Spring Rolls - Simrun Chopra

Ingredients

  • 1 big capsicum (green) sliced very thin
  • 1 big onion sliced very thin
  • 1/2 cup chives sliced fine into 2" pcs
  • 1/2 cup finely sliced celery stick
  • 1 cup finely sliced cabbage
  • 1/2 cup finely sliced carrots
  • 1 tbsp of chopped garlic
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • salt according to taste
  • 1/2 tsp red chilli flakes(optional)
  • few green chillies chopped fine and small (optional)
  • 1 tsp soya sauce
  • 1 tbsp chopped coriander leaves (optional)
  • 1 tbsp of refined oil

Method for the vegetables

  1. In a kadhai add the oil.
  2. Warm the oil a little, when the oil is warm.
  3. Add the garlic and stir fry for few minutes till the raw smell goes.
  4. Add the sliced onion and capsicum. Stir fry for few seconds.
  5. Add chives and celery stick and carrots. Stir fry for a minute.
  6. Add the cabbage and stir fry for a minute or so.
  7. While stir frying need to keep in mind that the vegetables should be a little bit crunchy . Add the pepper, sugar and salt.
  8. Add the chopped green chillies and chilli flakes (can skip this step if you do not want to put ).
  9. Lastly add the soya sauce Stir fry till vegetables are left little crunchy.
  10. Add the chopped coriander leaves if you desire. Mix well.
  11. All the above to be done in high to medium flame,
  12. When vegetables are done remove from fire and keep aside.

Note: 

  1. If you want to add chicken, need to finely cut small chicken pieces in strips of 1/2, need 1/2 cup of chicken strips.
  2. Put a pinch of salt and pepper on the chicken and mix well.
  3. In a pan add 1 tbsp of oil Warm the the oil, add the chicken strips cook on high flame till done.
  4. Remove from flame and keep side.
  5. Then add the vegetables to the chicken and mix it well. Keep aside .

Spring Rolls Batter for the wrapper
Ingredients

  • 1/2 cup cornflour
  • 1/2 cup Flour (maida)
  • 1/2 egg
  • 3/4 cup water
  • pinch of salt

Method

  1. Mix the flour, cornflour, egg,salt and water and make a smooth batter.
  2. Take a pan, heat the pan rub oil on the pan.
  3. When the oil is hot Add a ladle of this batter on the center and rotate it to make a big circle like a dosa .
  4. When bubbles come its done.
  5. Remove and place on a plate, on which before you need to dust some flour on it, so that it does not stick .
  6. Now add the vegetable mixture to it in the centre in a line and fold the sides in first, then one horizontal side, when placing the other side on it, rub a little water on the edge and press it in.
  7. Fold and keep aside.
  8. When all are done, brush a little oil on both sides, place in an air fryer.
  9. Cook till it becomes crisp.
  10. Serve with sauce of your choice.
