Channa (Chickpea) Sandwich

Channa (Chickpea) Sandwich - Simrun Chopra
Ingredients:
  • 3/4cups cooked chickpeas,
  • 2tablespoon onion, finely chopped
  • 2tablespoon tomato, finely chopped
  • 1 small green chili, finely chopped (optional)
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (optional)
  • Salt, to taste
  • 1teaspoon oil
  • 2 slices of your whole bread/multigrain bread
  • 1/2 teaspoon Butter for toasting
  • Lettuce leaves (optional)
  • Tomato slices (optional)

Method of preparation:

  1. Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Add the green chili (if using), turmeric powder, coriander powder, garam masala, and red chili powder. Sauté for another minute until the spices are fragrant.
  4. Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the mixture.
  5. Add the drained and rinsed chickpeas. Mash them slightly with the back of a spoon or a potato masher, leaving some chickpeas whole for texture.
  6. Season with salt to taste. Mix well and cook for another 5 minutes.Stir in the chopped cilantro and remove from heat.
  7. Butter one side of each slice of bread.
  8. Spread a generous amount of the chickpea mixture on the unbuttered side of half the bread slices.
  9. If desired, add a few lettuce leaves and tomato slices on top of the chickpea mixture.
  10. Cover with the remaining bread slices, buttered side out.
  11. Heat a pan over medium heat. Place the sandwiches on the pan and toast until golden brown and crispy on both sides, about 3-4 minutes per side.
  12. Cut the sandwiches in half and serve warm. Enjoy the delightful blend of spices and the comforting taste of the chickpeas.
