Channa (Chickpea) Sandwich
Ingredients:
Method of preparation:
- 3/4cups cooked chickpeas,
- 2tablespoon onion, finely chopped
- 2tablespoon tomato, finely chopped
- 1 small green chili, finely chopped (optional)
- 2 tablespoons cilantro, finely chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (optional)
- Salt, to taste
- 1teaspoon oil
- 2 slices of your whole bread/multigrain bread
- 1/2 teaspoon Butter for toasting
- Lettuce leaves (optional)
- Tomato slices (optional)
Method of preparation:
- Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until golden brown.
- Add the green chili (if using), turmeric powder, coriander powder, garam masala, and red chili powder. Sauté for another minute until the spices are fragrant.
- Add the chopped tomato and cook until it becomes soft and the oil starts to separate from the mixture.
- Add the drained and rinsed chickpeas. Mash them slightly with the back of a spoon or a potato masher, leaving some chickpeas whole for texture.
- Season with salt to taste. Mix well and cook for another 5 minutes.Stir in the chopped cilantro and remove from heat.
- Butter one side of each slice of bread.
- Spread a generous amount of the chickpea mixture on the unbuttered side of half the bread slices.
- If desired, add a few lettuce leaves and tomato slices on top of the chickpea mixture.
- Cover with the remaining bread slices, buttered side out.
- Heat a pan over medium heat. Place the sandwiches on the pan and toast until golden brown and crispy on both sides, about 3-4 minutes per side.
- Cut the sandwiches in half and serve warm. Enjoy the delightful blend of spices and the comforting taste of the chickpeas.
