  • Stir in the chia seeds
  • Add the lime juice
  • Taste and add honey as desired
  • Refrigerate and let the chia seeds soak the liquid from the fruit

NOTES

This recipe uses frozen fruit however if you are using fresh fruit then you have to cook the fruit.

  • To make with fresh fruit, wash, peel and deseed the fruit
  • Cut it into small pieces
  • Cook the fruit with sugar or jaggery ( sugar has a high natural pectin content that will help the jam thicken, it also acts as a preservative)
  • You do not need to add any water as the fruit will release its water content during cooking
  • Let it cool and add in the chia seeds and let is soak overnight in a refrigerator

the best fruits for this include :

  • Citrus fruits, like oranges, as they are high in pectin
  • Apples and Pears
  • Berries, like strawberries, raspberries, and blueberries. These softer fruits are lower in pectin
  • Stone fruits, like apricots, peaches
  • Tropical fruits, like pineapple, passion fruit. These are very low in pectin and will require a little more sugar.
  • Indian fruits like gooseberries, plums also work well
