Chicken Frankie

Chicken Frankie - Simrun Chopra
Ready parathas/tortillas/quesadilla as per requirement.
  • 300 gms of boneless chicken cut in cubes
  • 1 medium to big onion cut in cubes
  • 1 medium size tomato cut in cubes
  • 6-7 pods of garlic chopped
  • 1-1 1/2" pc ginger cut into julienne
  • 1 tsp black pepper powder, ground coarsely
  • Salt to taste
  • 1 tsp brown sugar (can use normal sugar also )
  • 2 tsp dark soya sauce
  • 3 tbsp of oil

Ingredients for hung yoghurt
500gms of yoghurt ( put yoghurt on a muslin cloth, close it and keep aside for 1/2 hr-1hr )
1/2 tsp garlic paste
Salt to taste
Pinch of pepper
2 tsp dill chopped (optional)
1 tbsp celery stem chopped (optional)
1/2 medium size grated (optional)
1/4 tsp red chilli flakes
1/2 a lime ,juice
1-2 green chillies finely chopped (optional)
Mix all of the above together and keep aside.

Ingredients for topping
  • Sliced carrots
  • Sliced tomato
  • Sliced cucumber
  • Sliced onion
  • Sliced lettuce
  • Sliced iceberg
  • Little mustard sauce (optional)
  • NB: if you like mustard ,then can mix mustard sauce on the cut vegetables and keep aside .
  • Or just put a little mustard sauce on top of the Frankie if you want .
  • Or can seperately serve some salad on the side tossed lightly with a little mustard sauce .

Method
  • Take a kadai add 2 tbsp of oil
  • Warm the oil a little, when the oil is warm add the cut chicken
  • Stir fry till half done
  • Then add the chopped garlic and ginger julienne
  • And saute for few minutes and cook till done.
  • Now remove the chicken from the kadai and keep aside
  • In the same kadhai add 1 tbsp of oil
  • Warm the oil a little
  • Then add the cut onion, cook till it becomes translucent and change colour
  • Now add the chopped tomato
  • Saute till the tomato becomes soft
  • To this now add 1 tsp brown sugar and the soya sauce
  • Cook for few minutes on low flame
  • Now add the cooked chicken and little salt to taste, keeping in mind that the sauce has salt
  • Then add the coarsely ground pepper
  • Mix it in well and cook for few minutes till chicken is done .
  • Remove the chicken and cut into strips
  • Now take a paratha place the chicken strips on it
  • Top with hung youghart
  • Then top with all the sliced veggies .
  • Add a wee bit of
  • Mustard sauce /Sriracha sauce or any other sauce you like (optional)
  • Close with a toothpick
  • Enjoy .
