Chicken Pulav

Chicken Pulav - Simrun Chopra
Ingredients

500 gms of chicken
2 big onions sliced
1 big tomato chopped
1 tsp ginger paste
1 tsp garlic paste
2-3 tbsp of peas
1 potato cut into 8 pieces (optional)
few slit green chillies to taste .
salt according to taste
red chilli powder according to taste
½ tsp turmeric powder
¼ tsp cumin powder
¼ tsp dhaniya powder
½ tsp garam masala
2-3 bay leaf
1 tsp whole cumin
4 cloves
1 piece of cinnamon stick
3 pieces of green cardamom
3 tbsp of oil/ghee
1 ½ cups rice (wash the rice and soak it and keep aside for 1/2 hour)

Method

  • Put oil/ghee in a kadhai and let it warm a little.
  • When the oil/ghee is warm.
  • Add the clove, cinnamon stick, cardamom, bay leaf and whole cumin seeds.
  • When the cumin seeds start to splutter add the sliced onions.
  • Cook the onions till it becomes translucent and beige brown in colour.
  • Add the ginger garlic paste. Saute till the raw smell of the ginger garlic goes.
  • Add the chopped tomato and whole green chillies. Saute till tomato is mushy.
  • Add the chicken and saute for few minutes.
  • Add the salt, red chilli powder, turmeric, dhaniya powder, cumin powder and garam masala. Saute on low flame till chicken is ¾ cooked and it has a golden brown colour.
  • Add the potato and saute for few minutes.
  • Add the water to the chicken (ratio used is 1:2 so here, have used 3 cups of water).
  • Add the peas stir for few minutes .
  • Add the rice (at this stage can check the salt) and mix well.
  • When the water starts bubbling, cover and cook on low flame till done.
  • When done, turn the flame is off, let it rest for sometime.
  • Serve with salad and raita .
