Coriander Stir Fry Chicken

Coriander Stir Fry Chicken - Simrun Chopra

Ingredients
  • 300-400 gms boneless chicken 
  • Marinate chicken in 
  • 1/2 tsp sesame oil 
  • 1/2 tsp sugar 
  • 1/2 tsp chilli flakes 
  • 1/2 tsp light soya 
  • Pinch of salt 
  • Marinate the chicken in the above ingredients together and keep aside 

Remaining ingredients

  • 8-10 garlic pods chopped into little big pieces 
  • 2-4 fresh red chillies cut diagonally into little big pieces 
  • 10-12 whole peppercorns 
  • 1/4-1/2 tsp coarsely pounded blackpepper 
  • 1 tsp light soya sauce 
  • 1 tbsp oyster sauce 
  • 1 cup coriander stems cut into 1-2 pieces 
  • 1/4 cup coarsely cut leaves 
  • 1 tbsp coriander roots pounded 
  • Salt to taste 
  • 1/2 tsp sugar 
  • 2-3 tbsp of oil 

Method
  • Take a pan and add the oil to the pan 
  • Warm the oil a little and when the oil gets warm 
  • Add the whole peppercorns and the coarsely pounded blackpepper 
  • Then add to the blackpepper the chopped garlic and stir fry for few seconds 
  • To this add the cut red chillies and stir fry for few minutes 
  • When you see the garlic changing color 
  • Add the marinated chicken and mix it well 
  • Stir fry for few minutes ,then add the pounded coriander roots and mix it in 
  • Now add the oyster sauce and mix it throughly with the chicken and all the other ingredients in the pan 
  • Add the light soya sauce and mix it in well nicely 
  • Now cover and cook the chicken for few minutes on low flame 
  • Keep stirring in between 
  • Then add salt to taste and the sugar 
  • Mix it in all nicely stir fry for few seconds 
  • Then cover and cook till chicken is 90% done 
  • Open the cover and add the coriander stems and leaves to the chicken 
  • Mix the coriander stem and leaves with the chicken and cook till chicken is done. 
  • Serve with plain rice /fried rice/noodles .
