Easy Hummus with Tomato and Cucumber Salad


  • For the Hummus:
  • 3/4 cups cooked chickpeas, drained and rinsed
  • 1 teaspoons oil
  • 1teaspoons lemon juice
  • 1 garlic cloves, minced
  • 1/2 teaspoon ground cumin (optional)
  • Salt to taste
  • 2-3 tablespoons water (as needed for consistency)

For the Salad:

  • 1 cup cherry tomatoes,
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 tablespoons fresh parsley, chopped
  • Salt and pepper to taste


Make the Hummus-

  1. In a food blender , combine the chickpeas,oil, lemon juice, minced garlic, ground cumin (if using), and salt.
  2. Blend until smooth. Add water, one tablespoon at a time, until the hummus reaches your desired consistency.
  3. Taste and adjust seasoning if needed.

Make the Salad:

  1. In a large bowl, mix the cherry tomatoes, cucumber, red onion, and fresh parsley.
  2. Drizzle with oil and lemon juice.
  3. Season with salt and pepper to taste. Toss everything together until well combined.
  4. Spread the hummus on a serving plate.
  5. Top with the tomato and cucumber salad.
  6. Optionally, drizzle with a little extra olive oil and sprinkle with additional parsley for garnish.
  7. Served right away and enjoy!
