Easy Hummus with Tomato and Cucumber Salad
Ingredients:
- For the Hummus:
- 3/4 cups cooked chickpeas, drained and rinsed
- 1 teaspoons oil
- 1teaspoons lemon juice
- 1 garlic cloves, minced
- 1/2 teaspoon ground cumin (optional)
- Salt to taste
- 2-3 tablespoons water (as needed for consistency)
For the Salad:
- 1 cup cherry tomatoes,
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions:
Make the Hummus-
- In a food blender , combine the chickpeas,oil, lemon juice, minced garlic, ground cumin (if using), and salt.
- Blend until smooth. Add water, one tablespoon at a time, until the hummus reaches your desired consistency.
- Taste and adjust seasoning if needed.
Make the Salad:
- In a large bowl, mix the cherry tomatoes, cucumber, red onion, and fresh parsley.
- Drizzle with oil and lemon juice.
- Season with salt and pepper to taste. Toss everything together until well combined.
- Spread the hummus on a serving plate.
- Top with the tomato and cucumber salad.
- Optionally, drizzle with a little extra olive oil and sprinkle with additional parsley for garnish.
- Served right away and enjoy!
