Gajar Matar (carrot & peas)
My Dadi's Gajar Matar (carrots and green peas) ki Subzi
Ingredients :
- 500gms carrots, peel and cut into cubes and keep aside
- 2-3 tbsp of oil/ghee
- 1 tsp whole cumin
- 1/4 tsp asafoetida
- 1 tbsp grated ginger
- 2-3 green chillies chopped
- 1 medium -big tomato chopped
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- Salt to taste
- 2 tsp of crushed dry kasturi methi leaves
- 2 tbsp chopped coriander leaves
Method
- Take a kadhai add the oil/ ghee and let it become warm
- Then add the whole cumin and asafoetida
- Stir fry for 30-40 seconds
- Then add the grated ginger and stir fry for a minute or so
- Next add the chopped green chillies
- Stir fry for on medium to low flame for a minute or so
- Now add the chopped tomato
- Saute for few minutes till the tomato becomes mushy
- Then add the turmeric powder and red chilli powder and saute till starts seeping from the sides
- To this masala add the cut carrots and mix it in well with the masala
- Stir fry for few minutes
- Then add peas and mix it in well
- Stir for few minutes then add salt to taste
- Now cover the carrots and cook on low flame till the carrots are cooked
- Do keep stirring in between
- If required do add few tbsp of water .
- When the carrots are done or 90% done Add the crushed kasturi methi leaves
- Mix it in well and stir for few minutes .
- Lastly add the chopped coriander leaves (this is optional)
- Mix it in well Keep for few minutes and done .
