Gajar Matar (carrot & peas) - Simrun Chopra

My Dadi's Gajar Matar (carrots and green peas) ki Subzi

Ingredients :

  • 500gms carrots, peel and cut into cubes and keep aside 
  • 2-3 tbsp of oil/ghee
  • 1 tsp whole cumin 
  • 1/4 tsp asafoetida 
  • 1 tbsp grated ginger 
  • 2-3 green chillies chopped 
  • 1 medium -big tomato chopped 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp chilli powder 
  • Salt to taste 
  • 2 tsp of crushed dry kasturi methi leaves 
  • 2 tbsp chopped coriander leaves 


Method

  • Take a kadhai add the oil/ ghee and let it become warm 
  • Then add the whole cumin and asafoetida 
  • Stir fry for 30-40 seconds 
  • Then add the grated ginger and stir fry for a minute or so 
  • Next add the chopped green chillies 
  • Stir fry for on medium to low flame for a minute or so 
  • Now add the chopped tomato 
  • Saute for few minutes till the tomato becomes mushy 
  • Then add the turmeric powder and red chilli powder and saute till starts seeping from the sides 
  • To this masala add the cut carrots and mix it in well with the masala 
  • Stir fry for few minutes 
  • Then add peas and mix it in well 
  • Stir for few minutes then add salt to taste 
  • Now cover the carrots and cook on low flame till the carrots are cooked 
  • Do keep stirring in between 
  • If required do add few tbsp of water .
  • When the carrots are done or 90% done Add the crushed kasturi methi leaves 
  • Mix it in well and stir for few minutes .
  • Lastly add the chopped coriander leaves (this is optional)
  • Mix it in well Keep for few minutes and done .
