Hakka Noodles - Simrun Chopra

Hakka Noodles Kolkata Tangra Style 
This is a basic go to noodles recipe that goes with everything. 

Tangra is the Little China of Kolkata and has a large Chinese settlement. The area is full of Chinese restaurants and basic noodle that goes with everything is called the "hakka noodle" 

They do not have things like schezwan noodles or our new chilli garlic noodles etc. 
Usually their menu is Hakka noodles, Mein Foon noodles (thin rice noodles), Cantonese Pan Fried Noodles etc. 

Ingredients

  • 4 pkts of noodles boiled and kept aside (individual portion pkts)
  • 1 cup cabbage shredded 
  • 1 cup carrots cut into julienne 
  • 1 cup capsicum cut into strips 
  • 1 cup spring onions cut into 1"pieces 
  • 2 medium onions cut into slices 
  • 1 /2 cup chives chopped 
  • Salt to taste 
  • 1/2 tsp pepper 
  • 1 tsp sugar 
  • 2 tsp vinegar 
  • 2 tsp green chilli sauce (or whatever is available)
  • 2 tsp tomato sauce 
  • 1 - 2 tsp soya sauce 
  • 3 tbsp of oil 


Method

  • Heat the the oil in a kadhai or wok.
  • Once the oil is hot add the sliced onions and carrots and stir fry for few seconds 
  • Then add the cabbage and capsicum and stir fry for few seconds 
  • Add in the spring onions and mix well
  • Add the noodles along with the the sauces and salt, pepper and sugar 
  • Mix everything gently to incorporate but make sure you do not break the noodles
  • Toss on high flame for 5 - 7 mins taking care not to break the noodles 
  • Taste for salt and adjust based on your taste 
  • Add the chives ( optional ) and stir fry for few seconds 
  • Done
