Healthy Sweet Pongal
Sweet Pongal ( Moong Dal Kheer)
Ingredients :
1/4 cup moong dal
Little less than 1/4 cup rice
1/4 cup milk
2 cups of water
1 tsp ghee
4-5 almonds cut in slivers
4-5 raisins
1/4 tsp of cardamom powder
Jaggery according to taste, here I have used little less than 1/4 cup
Method :
Dry roast the moong dal on low flame till you get a nice fragrance
Wash the dal and rice, drain the water and keep aside
Chop the almonds and raisins into thin strips and keep aside
Warm the ghee in a kadhai. Once it is liquid and warm enough add the dry fruits and roast for a minute or so and keep aside
In the same Kadhai add the washed dal and rice and stir fry for 1-2 minutes
Then add the water and let it cook on medium heat, uncovered
Add the jaggery and mix well
When the dal and rice is 3/4 cooked add 1/4 cup milk and mix well
Cook till the dal and rice are cooked
Taste the pongal for sweetness and add more if desired
Gently mash the rice and dal a little and leet it cook on slow flame till it thickens
Add the cardamom powder and mix it in
The pongal should have a thick consistency
Transfer to a bowl and garnish with the roasted dry fruits
Note : Using the dark jaggery made from dates will give your pongal a nice beige brown colour .
