Masala Karela

Masala Kerela (Bitter Gourd)

500gms of kerela
(Cut into 1"pieces, with skin, remove the insides of the kerela and discard)
3 tbsp oil
Masala Mix

  • 2 1/2 tbsp of besan (gram flour)
  • 2 tsp cornflour
  • 2 tsp maida (refined flour)
  • 1 tsp turmeric powder
  • 1 tsp dry mango powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 1/2 tbsp dry fenugreek leaves (dry kasturi methi )
  • 1 tsp red chilli powder
  • 1/2 tsp pepper powder
  • 3/4 tsp coriander powder
  • Salt to taste
  • 1 tbsp curd
  • 1 lemon (juice squeezed)
  • 1 tbsp chopped garlic
  • 1 tsp chopped ginger
Add 3-4 tbsp of water and mix all of the above into a smooth paste and keep aside and keep aside

  • Take a pan add 1 cup water and heat it till the water is lukewarm ,then add the cut kerela to the pan and add a pinch of salt
  • Cover and cook the kerela till it is 3/4 done
  • When the kerela is 3/4 done remove e from the pan and keep aside
  • Now add the kerela to the paste and mix it well ,so that the kerela is coated with the masala inside out .
  • Take a pan add the oil and warm the oil for few minutes .
  • Then add the masala coated kerela to the pan
  • Stir fry for few minutes
  • Cook on low flame till the kerela is completely cooked
  • Serve Hot
