Methi & Arbi Subzi

2 medium size bunch of methi leaves (wash and chop into small pieces)
300-400 gms of arbi (colacassia - peel and cut in circles )
2 medium onions chopped
2 tsp chopped garlic
2-3 whole red chillies
1 big tomato chopped
1/2 tsp whole cumin
3-4 tbsp of mustard oil (or any oil of your choice)
Salt to taste
Red chilli powder to taste
1/2 tsp turmeric powder
1/4 tsp garam masala
2 tbsp of tamarind pulp


  • Take a kadhai ,add the oil ,then heat the oil
  • When the oil is hot add the whole cumin and whole red chillies
  • Stir for few seconds then add the chopped onions
  • Stir fry till onions become translucent, then add the chopped garlic and stir fry for few minutes.
  • Now add the cut arbi and salt and cook for few minutes
  • Cover and cook on low flame stirring in between for few minutes and cook till the arbi is 3/4 done
  • Add in the chopped methi leaves and mix it in well
  • Now add the chopped tomato and mix it in well
  • Stir fry for few minutes ,then add the turmeric and red chilli powder and stir fry on low flame
  • The methi leaves will leave its own water
  • After few minutes add the garam masala and cook till the methi leaves are cooked
  • Lastly add the tamarind pulp and stir fry on low flame for 5-10 minutes.
  • Then done ,serve with dal and rice ,or have with roti .
