Moonglet
Moonglet (Moong omelette)
Ingredients:
- 30g moong dal
- ¼ tsp turmeric
- 1 tsp rice flour
- ½ tsp cumin
- 1 chilli (finely chopped)
- ½ tsp ginger paste
- 20g onion (finely chopped)
- 25g tomato (finely chopped)
- 50g capsicum (finely chopped)
- ¼ tsp eno fruit salt (optional)
- pinch chilli powder
- 1 tbsp coriander (finely chopped)
- Salt according to the taste
- 1tsp oil.
Method:
- Firstly, soak 1 cup moong dal for 30 minutes. you can increase the soaking time to up to 1 hour.
- drain off the water and blend to smooth paste.
- transfer the moong dal paste to a large mixing bowl.
- add turmeric, rice flour and salt.
- beat and mix well forming a nice thick batter.
- add cumin, 1 chilli, ½ tsp ginger paste, onion, tomato and capsicum mix it well making sure everything is well combined.
- Now heat a pan and spread oil.Once the pan is hot, add eno fruit salt, water to the batter and mix gently.
- Once the batter turns frothy, pour onto the hot pan.
- sprinkle chilli powder and Chopped coriander.
- cover and simmer for 2 minutes or until the base is cooked well.
- now flip over and press gently.
- make a good slit in the centre simmer for a minute or until it is cooked completely.
- You can cut into the pieces if needed
- Finally, enjoy moonglet with green chutney and curd.
