Okra (Ladyfinger) Omelette
Ingredients for 1 Serving:
100g chopped okra (ladyfinger)
2 eggs
20g chopped onion (optional)
1 tsp rice flour
¼ tsp chopped garlic
¼ tsp ground black pepper
Salt to taste
Chili powder (based on personal preference)
1 tsp oil

Method:
1. In a mixing bowl, beat the eggs thoroughly.
2. Add the chopped okra, garlic, black pepper, salt, chili powder (if using), chopped onions (if desired), and rice flour to the beaten eggs.
3. Gently stir the mixture until all the ingredients are well combined. Allow it to sit for up to 10 minutes to allow the flavors to meld.
4. Heat a small amount of oil in a pan over medium heat. Pour a large spoonful of the mixture into the pan, forming a round circular shape.
5. Cook the omelette for 3-4 minutes on each side, or until it turns golden brown and is cooked through.
