Onion Chutney

Onion Chutney - Simrun Chopra
Ingredients
  • 2 big onions 
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1/4 tsp fenugreek seeds 
  • 1 full garlic (15-20 pods)peeled
  • 1- 11/2" pc ginger cut into pieces 
  • 4-6 whole red chillies 
  • 1/4 cup coriander leaves 
  • 11/2 tbsp of soaked seedless tamarind 
  • 1 1/2 tsp powdered jaggery 
  • Salt to taste 

Method
  • Take a kadhai add the coriander seeds
  • Stir fry for few seconds
  • Then add the cumin seeds and the fenugreek seeds 
  • Stir fry for 30-40 seconds till a nice fragrance emits and the colour starts changing a little
  • Then add the peeled garlic, cut ginger and the whole red chillies 
  • Stir fry for few minutes
  • Should get a nice fragrance and when the seeds , chillies change colour and the garlic and ginger get a little roasted .
  • Remove from the stove and let it cool down 
  • The put in a grinder and dry grind it and when done keep aside 
  • Next 
  • Take a kadhai add the oil in it warm the oil a little then add the sliced onions
  • Stir fry for few minutes then add salt to taste
  • Stir fry till onions become soft and little translucent
  • Now add the coriander leaves
  • Stir fry Stir fry the onions for few more minutes Then add the soaked seedless tamarind
  • Stir fry till the onions starts changing colour slightly
  • Then add the powdered jaggery
  • Stir fry for 30-40 seconds 
  • Switch of the flame and when it cools down add to the grinder with the powdered ground ingredients and grind to a smooth paste 
  • At this stage can taste and adjust ,salt ,sweet ,chilli and sourness (tamarind) .
  • Done 
  • Ready to serve
