Pearl Onions Chicken
500 gms chicken
Marinate chicken in
1 tsp ginger-garlic paste
1/4 tsp cumin powder
1/4 tsp coriander powder
Pinch of turmeric powder
1 tsp Kashmiri red chilli
1/2 tsp garam masala
1 1/2 tsp Kasturi methi leaves
3 tbsp yoghurt
Mix all of the above with the chicken and keep aside for 20-30 minutes
Remaining ingredients
2 bay leaves
1 black cardamom
2 green cardamom
1 " pc cinnamon stick
1 tsp black peppercorns
2 medium size onions sliced
1 tomato chopped
2 tbsp chopped coriander leaves
1 tsp ginger garlic paste
Red chilli powder to taste
Salt to taste
2 tbsp of oil
For the tarka ( seasoning)
1 tbsp of ghee /oil
1 tsp whole cumin and 1 tsp whole coriander coarsely pounded together
6-8 pearl onions
Few slitted green chillies
1 tbsp of ginger julienne
Take a pan /kadhai add the oil
Heat the oil
When the oil becomes hot add the bay leaves, black and green cardamom, cloves  and cinnamon stick
Stir fry for few seconds then add the sliced onions
Stir fry till onions become beige brown
To this masala now add the ginger-garlic paste
Sauté till the raw smell of the ginger garlic goes
Then add the chopped tomatoes
Sauté till tomatoes become soft
If required do add few tbsp of water to sauté
When the masala becomes a nice reddish brown
Add the marinated chicken and mix it in well with the masala
Add salt and red chilli powder to taste and mix it all in
Sauté for few minutes
Cover the chicken and cook on low flame ,stirring in between
The chicken will leave its own water ,in which the chicken will cook
When the chicken is 3/4 done remove the cover and sauté till done
Then finally add the tarka then it's done
For the tarka
Take a pan add 1 tbsp of oil/ghee
Warm the oil/ghee
When it is warm add the coarsely pounded coriander and cumin seeds
To this add the pearl onions
Stir fry for few minutes
Then add the ginger julienne
Stir fry for few minutes
Lastly add the whole slitted green chillies
Stir fry everything together for few minutes
Now add this to the chicken and mix it in well
Saute for few minutes on low flame so that the onions become little translucent.
Lastly add chopped coriander leaves
Mix it in and serve hot
