Ingredients
500 gms chicken (preferably boneless)
1 medium onion cut into thick slices
1/2 red bell pepper cut into thick pieces
1 full pod of garlic peeled (whole)
1 " pc of ginger cut into half then into thin slices
5-6 whole red chillies cut into pieces
1 tsp whole peppercorns
1/2 tsp chilli flakes
1/2 tsp pounded peppercorns
Salt to taste
2 tbsp oil
For the sauce :
Mix these sauces together and keep aside
1 tsp dark soya
1/2 tsp oyster sauce (optional)
2 tsp light soya
1/2 tsp vinegar
1/2 tsp sugar
1 tsp cornflour
For the chicken
Marinate chicken in salt and pepper to taste ,1 tsp cornflour,1/2 an egg and 1 tsp oil
Keep for 15-20 minutes
Then take a pan add 1 tbsp of oil
Heat the oil ,when the oil is warm
Add the chicken and stir fry till it becomes a little brown ,then let it cook on low flame till done .
Remove from pan and keep aside
Method
Take a pan put 2 tbsp of oil
Add the whole peppercorns
Stir fry for few seconds
Add the ginger slices
Stir fry for 30-40 seconds
Add the pods of garlic
Stir fry fora minute or so
Add the cut whole red chillies
Stir fry for few minutes till the ginger ,garlic and chillies get roasted
Add the thickly sliced onion
Stir fry for few seconds
Add the cut bell peppers
Stir fry for few minutes
Add the salt and stir fry for a minute or so
Add the stir fried chicken
Mix it in well
Stir fry for few minutes
Add the mixed sauces (at this point I put of the flame as the sauces thicken immediately)
Mix it in well
When the sauces are mixed in well
Restart the flame and stir fry for a minute or so
Add the chilli flakes and pounded peppercorns
Mix it in well
Stir fry for few minutes .
Done .
