Quick Classic Lentils Chili

Ingredients:
- 1 cup cooked lentils
- 1/2 cups tomatoes
- 2 tbs onion, diced
- 2tbs pepper, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 tsp o oil
- Optional toppings: spring onion, coriander, green chilli
- Heat the oil in a large pot over medium heat.
- Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
- Stir in the minced garlic, chili powder and cumin . Cook for 1 minute until fragrant.
- Add the diced tomatoes and cooked lentils. Stir well to combine.
- Season with salt and pepper to taste.
- Served hot with your favorite toppings.
