Quick Classic Lentils Chili
  • 1 cup cooked lentils
  • 1/2 cups tomatoes
  • 2 tbs onion, diced
  • 2tbs pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tsp o oil
  • Optional toppings: spring onion, coriander, green chilli
  1. Heat the oil in a large pot over medium heat.
  2. Add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  3. Stir in the minced garlic, chili powder and cumin . Cook for 1 minute until fragrant.
  4. Add the diced tomatoes and cooked lentils. Stir well to combine.
  5. Season with salt and pepper to taste.
  6. Served hot with your favorite toppings.
