Red Vegetable Pizza
Ingredients
- 4 large whole-wheat flour tortillas
- 2 red peppers, cut into strips
- 1 medium red onion, diced
- 2 tablespoons extra-virgin olive oil
- ½ cup unsalted tomato sauce
- 1 cup spinach
- ¾ cups of part-skim mozzarella shredded cheese
- ¼ cup finely grated Parmesan cheese
Method
1. In a small bowl, combine shredded mozzarella cheese and grated Parmesan
cheese.
2. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil, and toss
the red pepper and red onion for 7-10 minutes (or until soft).
3. Turn on broiler.
4. Place two tortillas on a rimmed baking sheet. Brush with olive oil. Broil for 2
minutes or until browned. Remove from heat, flip over, and set aside.
5. Spoon 2 tablespoons of tomato sauce on the non-brown side of the tortilla.
6. Top with peppers and onions, spinach, and cheese (about ½ cup of cheese
blend per pizza).
7. Place pizzas back on baking sheet and broil for 2 minutes or until cheese melts.
8. Repeat with remaining two tortilla pizzas.
