Snake Gourd Sabzi

Snake Gourd Sabzi - Simrun Chopra

 

A simple yet different way to make snake gourd 

 

Ingredients

  • 500 gms of snake gourd
  • 2 tbsp oil
  • 1 onion sliced fine
  • 1 tsp ginger-garlic paste or grated
  • 1 tomato chopped
  • 1/4 tsp cumin powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp sugar
  • Salt to taste (keeping in mind that a pinch of salt has been added to the raw snake gourd)
  • Few slitted green chillies
  • 1 tsp mustard paste (Grind or pound 1 tsp mustard seeds with a little salt and 1 green chilli)
  • 2 tbsp of chopped coriander leaves

 

Method

  • Peel or scrape the skin and cut into half vertically and then cut into 1-2 " pieces ,then sprinkle with 1/4 tsp turmeric and a pinch of salt and keep for 5-10 minutes
  • Take a kadhai add the oil ,when the oil becomes warm
  • Add the sliced onion
  • Stir fry for few minutes ,when the onion starts changing colour ,it starts become beige brown. Then add the grated ginger garlic or paste
  • Saute for few minutes till the raw smell of the ginger garlic goes and it turns into a nice light brown colour
  • Then add the chopped tomato
  • Saute for few minutes Then add the cumin powder
  • Mix it in
  • Next add salt to taste ,keeping in mind that salt has been sprinkled on the raw snake gourd
  • Add the turmeric powder, mix it in well
  • Now add the sugar and saute for few minutes
  • Then add 1/4 cup water and mix the masala well ,saute till the water dries up and the masala turns soft
  • When the water dries up add few slitted green chillies
  • Then add the mustard paste and saute for a minute or so
  • Now add the cut snake gourd and mix it in
  • Stir fry for few minutes
  • Cover and cook till it is done .do keep stirring in between. Snake Gourd leaves a lot of water, if it does not do so then add 1/2 cup of water and let it cook on low flame
  • When done can leave a little gravy or dry it up is on personal choice.
  • Add the chopped coriander leaves and mix it in
  • And done .
